Baked Flakes (also called "Ben-Gurion rice" or Israeli couscous) are grains made from ingredients similar to pasta but, unlike pasta, undergo a process of baking. Flakes were invented in Israel during the austerity period, and are considered one of Israel's only original culinary contributions to the world. The flakes are particularly similar to the Lebanese dish "Maptol", to the Italian dish "Urzo", and to the Sardinian plate "Pergola".
