"Real" couscous is made from semolina (wheat), the source of food in North African countries (I do not get into fights of others, it tastes delicious no matter where it came from!) And the origin of the word couscous is probably in the barbaric word casco, which means "rounded" or "rolled" Or in the barbaric word kiskis, a kind of braided basket on which the grains steamed.
